CHICKEN PILLOWS | |
1 whole chicken breast, halved, skinned, boned and pounded slightly 1 garlic clove, halved 1 oz. prosciutto 1 oz. Mozzarella cheese, thinly sliced 2 tbsp. seasoned bread crumbs 2 tbsp. (1/4 stick) butter, clarified Salt and freshly ground pepper 1 tbsp. chopped parsley (broadleaf, if available) Preheat oven to 350 degrees. Lightly grease small shallow baking dish. Rub chicken breasts with cut garlic clove. Place prosciutto and cheese over chicken. Sprinkle with bread crumbs. Roll up, starting at broader ends, and secure with toothpicks. Place in baking dish. Heat butter briefly. Pour over chicken. Season with salt and pepper to taste. Bake until chicken is done, about 20 to 25 minutes. Sprinkle with parsley. 2 servings. |
