CHICKEN BAKE 
3 whole chicken breasts, boned, skinned and halved
2 eggs, lightly beaten
1 tsp. salt
1/4 tsp. freshly ground pepper
1 c. bread crumbs
1/2 c. olive oil
6 slices boiled ham
6 slices Mozzarella cheese

TOMATO SAUCE:

1 lg. can Italian tomato sauce
1 lg. onion, chopped
2 tbsp. butter
1 clove garlic, chopped fine
1/2 tsp. thyme
1/2 tsp. dried oregano
Sugar

Dip chicken pieces into eggs mixed with salt and pepper. Coat each with bread crumbs. Brown chicken in olive oil. Arrange pieces in a single layer in a buttered baking dish. Place a slice of ham and a slice of cheese over each piece of chicken. Saute onion and garlic in butter until translucent. Add tomato sauce, thyme, oregano and sugar. Heat to boiling then pour over chicken pieces. Bake 25 minutes at 350 degrees. Serves 6.
