CORNBREAD SALAD 
2 pkgs. Mexican corn bread mix

Bake according to directions.

1 (12 oz.) fried bacon
1 c. chopped bell pepper
1/2 c. chopped green onion
1 c. chopped celery
2 lg. diced tomatoes
1 c. mayonnaise
Salt and pepper

Cool cornbread and bacon, crumble in large bowl. Mix vegetables, salt and pepper with cornbread and bacon. Then add mayonnaise and stir. Prepare ingredients ahead of time and refrigerate. When ready mix together and go. Good with fresh peas or beans.
