EGGPLANT LASAGNA 
1 eggplant
2 c. Italian bread crumbs
4 eggs
1 lb. ground meat
1 lb. Mozzarella, grated
1 lb. provolone, grated
Spaghetti sauce
Parmesan cheese

Peel and slice eggplant. Dip in eggs then bread with bread crumbs. Lightly brown in skillet with oil. Crumble and brown ground meat in pan. Separate from sauce. In a 9"x12" baking pan layer eggplant. Sprinkle ground meat over the eggplant and sprinkle Mozzarella and provolone over and lightly spoon sauce over top. Sprinkle with Parmesan cheese. Continue making layers until pan is full. Bake at 350 degrees for 60 to 90 minutes.
