SOFT DROP MOLASSES COOKIES 
1/2 c. sugar
1/2 c. molasses
1/2 c. melted shortening
3/8 c. warm coffee
1 tsp. baking soda, put in coffee
1 egg
1/4 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. salt
2 1/2 c. flour

Mix well first 6 ingredients, then add dry ingredients; let stand 1 hour or overnight. Drop by teaspoon on greased pan at 350 degrees for 8 to 10 minutes.
