MEXICAN PINTO BEAN ROLL 
Soak 1 pound of pinto beans overnight. Cook slowly until very tender. Add bacon drippings and salt to taste. Add 1 teaspoon ground ginger. Cook 15 minutes longer. Drain off liquid and mash beans. Form in a long roll on a platter which is covered with lettuce. Cut in slices to serve with Tamale Pie.

NOTE: Garlic (minced) and chili powder may be added to beans for flavor.
