IRISH SODA BREAD | |
2 c. sifted flour 1/2 tsp. baking soda 2 tsp. baking powder 1/2 tsp. salt 1 tbsp. sugar 2 tbsp. butter 1/4 c. raisins 1/4 c. currants 1 c. buttermilk 1 tsp. caraway seeds Grease bottom and sides of cake pan. Sift first 5 ingredients together. Cut in butter with a knife, add raisins, currants, caraway seeds and mix thoroughly. Add buttermilk and mix until flour is moistened. Turn into lightly floured board and knead lightly. Turn into cake pan, cut a cross on top and bake at 350 degrees for 30 minutes or until golden brown. Test to see if done. a Marilyn M. McAleavey |
