LEMON MUFFINS 
1/2 c. sugar
1/2 c. butter
2 egg yolks
Grated rind and juice of 1 lemon
1 c. plain flour
1 tsp. baking powder
2 egg whites, stiffly beaten

Cream sugar and butter together; mix next 4 ingredients in order with creamed mixture. Fold in egg whites last. Fill greased mini muffin tins and bake 15 minutes at 350 degrees. Roll or dip in powdered sugar. Yield 30 mini muffins.
