MARSHMALLOW COOKIES 
2 env. Knox gelatin
1/2 c. cold water
1 c. sugar
1 c. light corn syrup
2 tsp. vanilla
1 box vanilla wafers
Coconut, Jimmies or nuts

Dissolve gelatin in large bowl with cold water. In saucepan - bring sugar and syrup to a rolling boil. Pour hot syrup over dissolved gelatin and stir to blend. Cool thoroughly. Beat with electric mixer for 8-10 minutes until stiff. Add vanilla and let set 5 minutes. Spoon onto vanilla wafers and dip in coconut, Jimmies or nuts. Better if served the next day. You can also use ginger snaps. Do not make on a humid day. Yields 5 dozen.
