1 lb. pkg. black eyed peas 2 med. onions 2 oz. ground crayfish 2 fresh eggs (optional) 3 maggi cubes 4 oz. palm oil 4 oz. fresh shrimp (optional) 4 oz. ground beef (optional) Salt and pepper to taste 3 c. water Soak peas in water for a few minutes. De-husk peas by grating in a blender for a few seconds. Add water and peas to a large bowl, and drain water and black eyes. Repeat several times until black eyes and husk are removed. Add chopped onions to peas and blend until very fine. Be sure to add water while blending. Dissolve maggi cubes in a little warm water and add to the blended black eye peas. Pour mixture into a large bowl and add shrimps, eggs, ground beef, palm oil, salt and pepper to taste thoroughly. Put the mixture in greased tins or wrap in aluminum foil and steam coof for about 30-40 minutes. Serve with fried plantain, jollof rice, as lunch or dinner. Moin-Moin could also be served with custard pudding or pop. Serves 3-4. |
