MOM'S POTATO SALAD | |
2 1/2 lb. potatoes, preferably new 1/3 c. cider vinegar 2 tbsp. sugar 1/4 c. corn oil 1 tsp. salt 1 tsp. pepper 4 hard cooked eggs, chopped 1/3 c. finely chopped onion 2 tbsp. minced parsley 1/2 c. real mayonnaise Cook washed unpared potatoes in boiling salted water just until tender. Meanwhile in a small mixing bowl, with a fork, beat together the vinegar, corn oil, sugar, salt and pepper; set aside but beat together again just before using. As soon as potatoes are tender, drain and remove skins; slice into a large bowl; while potatoes are still hot, add egg, onion and parsley and toss lightly; immediately pour over the oil mixture but do not toss. Let marinate at room temperature for 1 hour. Add mayonnaise and toss lightly. Serve at room temperature or chilled. Makes 6 (1 cup) or 8 (3/4 cup) servings. |
