SPICY PEACH COBBLER 
1 (29 oz.) can sliced peaches, drained (reserve 1 c. syrup)
1/2 c. firmly packed brown sugar
2 tbsp. cornstarch
1/8 tsp. salt
1/8 tsp. ground cinnamon
1/8 tsp. ground cloves
2 tbsp. cider vinegar
1 tbsp. butter
1 c. all purpose biscuit mix
1/2 c. finely shredded sharp cheddar cheese
2 tbsp. butter, melted
1/4 c. milk

Put drained peaches into shallow 1 quart baking dish. Set aside.

Mix brown sugar, cornstarch, salt, cinnamon, and cloves in a saucepan. Blend in reserved peach syrup and vinegar; add 1 tablespoon butter. Bring mixture to a boil, stirring frequently. Cook until thickened, about 10 minutes. Pour over peaches and set at 400 degrees.

Combine biscuit mix and cheese. Stir in melted butter and milk to form a soft dough. Remove dish from oven and drop dough by heaping tablespoons on top of hot peaches.

Return to oven and bake 20 minutes or until crust is golden brown. Serve warm. 6 servings.
