BLACK BEANS & RICE 
1 (12 oz.) pkg. black beans
7 c. water
8 cloves garlic, minced
2 lg. onions, chopped
2 green bell peppers, chopped
1/3 c. olive oil
Ham bone
4 tsp. salt
1 tsp. pepper
1 tsp. oregano
1 bay leaf
3 tbsp. vinegar
1/2 c. chopped onions

Soak beans overnight in water to cover. Drain beans. Combine beans with next 10 ingredients and simmer for 3-4 hours or until beans are tender and liquid is thick. Pull ham from bone. Add vinegar just before serving. Serve over rice and garnish with chopped onion.
