“GERMAN APPLE PANCAKES” IS IN:

GERMAN APPLE PANCAKES 
4 eggs, room temperature
1/2 cup all-purpose flour
1/2 cup milk
1/4 tsp. salt
1 tbsp. vanilla extract
5 tbsp. butter
3 apples, peeled, cored and sliced
2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. ginger (optional)
1/4 cup brown sugar, packed
powdered sugar, for sprinkling

Whisk eggs, gradually adding flour, milk, salt and vanilla. Allow batter to rest for a few minutes. Heat a cast iron skillet on medium heat; melt butter. Spread apples around in skillet.

Season with cinnamon, nutmeg and ginger. Cover and cook for about 5 minutes. Sprinkle sugar over top. cover and keep cooking for another 5 minutes or until apples are soft.

Remove pan from heat and pour the batter over the apples, spreading evenly. Pour batter over apples.

Bake (in the skillet) in preheated 400°F oven for 15 to 20 minutes or until lightly golden and set in center. Cut in wedges; sprinkle with powdered sugar.
