NEW ORLEANS RED BEANS 'N RICE 
1 lb. red beans
2 qts. cold water
1 lg. onion, chopped
1 green pepper, chopped
2 stalks celery, chopped
3 tbsp. minced parsley
1/4 lb. minced ham
2 tsp. salt
1/4 tsp. cayenne pepper
1/8 tsp. black pepper
3 tbsp. green onion tops
2 1/2 c. uncooked rice, cook as directed on pkg.

Soak beans overnight. Next day add all other ingredients except onion tops. Cook 2 1/2 hours. Uncover and cook until soft and mixture is consistency of chili. Stir in onion tops and cook 10 minutes, stirring frequently. Serve over rice.
