POTATO TOMATO POT | |
2 lg. potatoes, cut in 6ths 1 garlic clove, minced 1-2 tbsp. olive oil 4 oz. mushrooms, sliced (1 c.) 1 sm. onion, cut in thin rings 1/2 tsp. salt Dash pepper 1 tbsp. chopped parsley 1 tomato, peeled & cut up In a 2 quart casserole, combine the potatoes, garlic and olive oil. Toss. Cover and microwave on high 6 minutes, stirring once. Add all but the tomato. Cover and microwave 4-8 minutes, or until the vegetables are tender, stirring once. Add the tomato and cook 30 seconds more. Or put all in a baking dish and bake in the oven at 350 degrees for 30 minutes, and 30 minutes uncovered. |
