POTATO TOMATO POT 
2 lg. potatoes, cut in 6ths
1 garlic clove, minced
1-2 tbsp. olive oil
4 oz. mushrooms, sliced (1 c.)
1 sm. onion, cut in thin rings
1/2 tsp. salt
Dash pepper
1 tbsp. chopped parsley
1 tomato, peeled & cut up

In a 2 quart casserole, combine the potatoes, garlic and olive oil. Toss. Cover and microwave on high 6 minutes, stirring once. Add all but the tomato. Cover and microwave 4-8 minutes, or until the vegetables are tender, stirring once. Add the tomato and cook 30 seconds more. Or put all in a baking dish and bake in the oven at 350 degrees for 30 minutes, and 30 minutes uncovered.

Since microwave ovens vary in power, you may need to adjust your cooking time.
