CHEESE - STUFFED CARROTS 
Lg. carrots
Grated Cheddar
Oleo
Cracker crumbs

Cook carrots and split lengthwise in 3 inch lengths. Cool and cut a groove from center. Mash the removed carrots with an equal amount of Cheddar and few tablespoons of butter. Press mixture back into carrots. Roll in melted butter and then cracker crumbs. Store in refrigerator until serving time. Heat through and serve.
