CAJAN FRIED TURKEY 
1 (10-12 lb.) turkey
Cajan seasonings
Large syringe (vet type)
Large pot (holds 64 quarts or more with basket)
Outdoor high heat burner
4-5 gallons peanut oil
Candy thermometer

Wash and dry turkey thoroughly. Mix the seasoning with water and use the syringe to inject the water/seasoning mixture into turkey especially under breast and around joints. Bring oil to frying temperature 400-425 degrees in large pot with basket. Lower whole turkey into oil and fry 3-4 minutes per pound. Remove from oil. Check for doneness and serve.
