PEPPERY CHICKEN WINGS
16 chicken wings
1 tsp. peanut or vegetable oil
1 tsp. cayenne pepper
1/2 c. plain low fat yogurt
1/4 c. buttermilk
1/4 c. crumbled blue cheese
1/2 sm. onion, grated
1 tsp. cider vinegar

Preheat the broiler. Separate the chicken wings at the joint and remove and discard the wing tips. In a medium size bowl combine the peanut oil and cayenne pepper; add the chicken wings and turn until well coated.

Place the chicken wings on the broiler pan rack and broil about 8 inch from the heat, turning occasionally until crisp and golden about 20 minutes. Meanwhile prepare the dip in a medium size bowl. Whisk together the yogurt, buttermilk, blue cheese, onion and vinegar, transfer to a small serving bowl. Set the dip in the center of a warm round platter and arrange the broiled chicken wings around it. Serves 8.
