AUNT MYRTHA'S GUMBO | |
1 lb. crab meat or shrimp 1 pt. oysters with liquid 1 baking hen, cut up 1/2 lb. link sausage 2 chopped onions 2 stalks chopped celery 3 pods chopped garlic 1/2 c. flour 1/2 c. oil 2 tbsp. butter 2 bay leaves 2 tbsp. file Salt and pepper to taste 8 qt. pot Make a roux with oil and flour in an iron skillet. Cook over low until dark brown. Use butter to simmer vegetables and sausage until onions are clear. Add 1 gallon water, bring to boil. Add roux, chicken, salt, pepper and bay leaf. Cook over medium heat until chicken is tender. Add seafood; simmer 15 minutes. Remove from heat; add file and cover 10 minutes. Serve over rice and enjoy yourself. |
