MORNING GLORY MUFFINS 
1 1/4 c. sugar
2 1/4 c. flour
1 tbsp. cinnamon
1/2 tsp. salt
1/2 c. shredded coconut
1/2 c. raisins
2 c. grated carrots
1 shredded apple
8 oz. crushed, drained pineapple
1/2 c. pecans or walnuts, chopped
3 eggs
1 tsp. vanilla
1 c. vegetable oil

Sift flour, sugar, cinnamon, and salt together in large bowl. Add fruits, carrots, and nuts. Stir to combine. In separate bowl, whisk eggs. Add oil and vanilla and beat together.

Pour over other ingredients and mix to combine. Spoon into lined muffin tins. Bake at 350 degrees for 35 minutes for extra large, 25 minutes for regular size.
