WILD RICE SIDE DISH 
1 1/2 c. wild rice

Wash and cover with 3 inches cold water. Soak overnight. Drain, add salt and cold water and boil until tender (15 minutes). Drain in colander, wash with hot water. Place in double boiler or steamer to keep warm.

In frying pan, mix the following: 4 slices chopped bacon 1 sm. onion 1/2 c. diced celery 1 can mushrooms or fresh Pepper and salt

If using as a dressing for wild fowl or poultry, add poultry or sage seasoning. This recipe may be made the day before and reheated in double boiler. Serves 4.
