12 BEAN SOUP 
1 lb. pkg. 12 varieties of dried peas & beans
2 tbsp. salt
2 qts. water
Ham hocks or 1/2 lb. ham chunks
1 lg. chopped onion
1 can tomatoes
1 lg. pod red pepper or 1 tsp. chili pepper
3 toes minced garlic
Juice of 1 lemon

Wash the beans and peas thoroughly and soak them overnight with 2 tablespoons salt and water to more than cover. In the morning drain, add 2 quarts water and ham. Simmer slowly 2 1/2 to 3 hours. Then add onions, tomatoes, pepper, garlic, lemon and simmer for at least 30 more minutes. Serve with a green salad.

NOTE: I buy 12 (1 lb.) packages of different varieties of peas and beans. Mix them well, measure out 2 cups and package for 12 soup batches. If this is too much for you, share with family and friends.
