BISCOCHITOS (ANISE COOKIES) 
2 c. pure lard
1 1/2 c. sugar
1/4 tsp. salt
4 eggs
5 1/2 c. flour
1 tbsp. whole anise seed
Cinnamon sugar (1/4 c. sugar and 1 tsp. cinnamon)

Mix lard, sugar and salt. DO NOT cream. Add eggs and mix with hands until lumpy. Add anise seed and mix. Add flour gradually. Work into a ball or a long roll. Refrigerate until ready to bake. Cut the roll into small portions and roll on floured board to a thickness of about 1/8 inch. Cut with cookie cutters. Sprinkle or dip each cookie on top side with cinnamon sugar. Bake at 425 degrees for 10 to 12 minutes or until light brown.

Makes 10 to 12 dozen.
