“DANISH EBLESKIVER” IS IN:

DANISH EBLESKIVER 
2 cups buttermilk
2 cups flour
3 eggs
1 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
2 tsp. sugar
applesauce

Beat egg yolks. Add sugar, salt and milk; then flour, baking soda and stiffly beaten egg whites.

Brush an Ebelskiver pan with oil or shortening, and fill the indentations in the pan until they are 2/3 full with dough.

Place a small teaspoon of applesauce on top of dough, then barely cover applesauce with a few drops of dough.

Cook until bubbly and cooked in the centers, turning carefully with a fork or a bamboo stick; finish baking on other side.

Serve with butter and maple syrup or jam.

Note: Avoid spilling applesauce in cups, as this will cause the Ebleskiver to stick.
