CLASSIC RICE SALAD 
3 c. cool cooked rice
1/4 c. diced pimento
1 tsp. salt
1/4 tsp. pepper
1 c. mayonnaise
1 tsp. prepared mustard
1/2 c. finely chopped onions
1/2 c. finely chopped sweet pickles or sweet relish
4 hard boiled eggs, chopped

Blend all ingredients thoroughly and chill. Serve on lettuce leaves and garnish with tomato wedges and olives (stuffed or ripe).
