CHINESE EGGS 
3 tbsp. butter
3 tbsp. flour
2 c. canned tomatoes (chopped)
2 tbsp. chopped green pepper
2 tbsp. chopped onion
1 tsp. salt
1/2 tsp. paprika
1 1/2 c. cooked rice
3 chopped hard cooked eggs
1/2 lb. grated sharp cheese

Melt butter; blend in flour. Add remaining ingredients. Bake in casserole 35 minutes at 350 degrees. Serves 4-6.
