OVERNIGHT EGG DISH 
1 c. diced ham or Canadian bacon
1/4 c. chopped green onions
12 extra lg. eggs, beaten
Sliced mushrooms (optional)
Diced green pepper (optional)
3 tsp. butter

In a skillet melt 3 tablespoons butter Cook onions and pepper until soft and ham until warm. Add mushrooms. Add eggs. Cook until set. Fold in cheese sauce.

CHEESE SAUCE:

2 tbsp. butter
3 tbsp. flour
1/8 tsp. pepper
1/2 tsp. salt
2 c. milk
1 c. shredded Cheddar cheese

Melt butter, stir in flour. Gradually add milk. Add cheese. Stir until melted.

TOPPING:

Mix:

1/8 tsp. paprika
4 tbsp. butter, melted
1 c. plain bread crumbs

Put in 12 x 7 x 2 inch dish. Sprinkle topping on. Cover and refrigerate overnight. Bake uncovered 30-40 minutes at 350 degrees the next morning.
