HUMMINGBIRD CAKE | |
3 eggs 1 1/2 c. oil and beat 1 (8 oz.) can crushed pineapple, not drained 2 c. chopped bananas, not mashed 1 1/2 tsp. vanilla Mix well. 3 c. flour 1 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 2 c. sugar 1 c. pecans, chopped Add dry ingredients to oil and egg mixture and stir until just moist "Do Not Beat". Pour into three 9 inch cake pans and bake at 325 degrees about 40 to 45 minutes. Cool in pans about 10 minutes. Turn out. Finish cooling and frost with cream cheese frosting. CREAM CHEESE FROSTING (about 2 cups) : Have ingredients at room temperature. 1/2 c. (1 stick) butter 2 (3 oz. each) pkgs. cream cheese 3 c. sifted confectioners' sugar Beat until smooth and fluffy. Beat in 1 teaspoon vanilla. Frost Hummingbird Cake and sprinkle with chopped pecans. |
