HUMMINGBIRD CAKE | |
1 tsp. baking soda 1 tsp. salt 2 c. sugar 1 tsp. cinnamon 3 eggs, beaten 1 1/2 c. vegetable oil 1 1/2 tsp. vanilla extract 8 oz. can crushed pineapple, with juice 1 c. chopped pecans 2 c. mashed bananas Combine first 5 ingredients in large bowl, add eggs and oil, stirring just until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, pecans and bananas. Pour batter into 13 x 9 x 2 inch greased and floured pan. Bake at 350 degrees about 1 hour or until tested done. Cool in pan for 10 minutes. Remove from pan. WHIPPED CREAM FROSTING: 2 c. heavy cream 5 tbsp. sifted powdered sugar 1 tsp. any flavoring Beat whipping cream in large, chilled mixing bowl at high speed of an electric mixer until foamy. Gradually add powdered sugar and flavoring, beating until stiff peaks form. Refrigerate cake after frosting. |
