ZUCCHINI BREAD | |
3 eggs, beaten until frothy 2 c. sugar 1 c. Mazola oil 1 tbsp. vanilla 2 c. grated zucchini, not peeled 2 c. sifted flour 1 tsp. cinnamon 2 tsp. baking soda 1 tsp. salt 1/4 tsp. baking powder 1 c. chopped nuts Beat eggs, sugar, oil and vanilla until thick and lemony. Mix sifted flour mixture (flour, cinnamon, baking soda, salt and baking powder) into egg mixture alternating with grated zucchini. Add chopped nuts. Pour mixture in 2 loaf pans that are greased and floured. Bake at 350 degrees for 1 hour (sometimes needs to bake 10 minutes longer). Let cool in pan before removing upside down on rack or tray. Cut around edges before removing. Should cool for at least 10 minutes before removing from the pan. |
