TOMATOES MOZZARELLA | |
1 med. onion, chopped 1/4 lb. butter 2 cans (16 oz.) tomatoes 1 tsp. salt 1/4 tsp. pepper 1 tsp. oregano 2 c. cooked rice 2 oz. mozzarella cheese, sliced Cook onion in butter until tender. Add tomatoes, seasonings and rice. Pour into a baking dish. Bake at 350 degrees for 20 minutes. Place mozzarella slices on top of casserole. Bake for 5 more minutes. Serves 8. |
