JIM'S FAVORITE BAKED POTATOES
WITH PEPPERS AND ONIONS
 
6 lg. baking potatoes, long type
Slices of sweet bell pepper, red & green mixed
Thin slices of onions

With real sharp knife, slice potatoes in slice 1/4 inch wide across potatoes almost through, leaving about 1/4 inch unsliced.

Mix onion and pepper slices into slots of potatoes. Place in foil lined baking pan.
