CANDIED ORANGE RIND 
Peel of 6 to 8 oranges, sliced thin into strips

Cover peel with water and bring to a boil. Boil 5 minutes, discard water. Boil peel with fresh water and discard 2 more times, a total of 3 times. Boil together 3 cups sugar, 1 1/2 cups water. Add rind and boil slowly until syrup stands to sugar at edge of pan. I use a cast iron skillet. Turn out onto waxed paper. Separate while hot into individual strips.
