BEAN SOUP 
4 qt. water
16 med. carrots, or 3 qt.
4 c. diced onions
1 lg. pkg. navy beans, soaked in water overnight
3 to 4 lb. ham, diced
3 celery stalks, diced
Pepper
Oregano
2 bay leaves
Parsley

Combine all ingredients and boil for 2 to 3 hours. Makes 8 quarts.
