DOUBLE CHOCOLATE MINT COOKIES 
10 oz. pkg. mint chips
1 1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. salt
1/2 c. softened butter
1/2 c. brown sugar
1/4 c. sugar
1 egg
1/2 tsp. vanilla
1/2 c. nuts

Preheat oven to 375 degrees. Melt over hot, not boiling, water 3/4 cup chips. Stir well until smooth. Remove from heat; cool. In a bowl combine flour, soda, and salt. In another bowl combine butter, brown sugar, sugar, and vanilla; beat until creamy. Add melted chips and egg; beat well. Gradually add flour mixture. Stir in remaining 3/4 cup chips and nuts. Drop by tablespoon onto ungreased cookie sheets. Bake 8-9 minutes. Allow to stand 2-3 minutes before removing from sheets. 2 dozen.
