TWICE BAKED POTATOES 
4 baking potatoes
3 green onions, thinly sliced
2 tbsp. butter
1/2 c. milk or half and half, hot
1/2 tsp. salt
Dash black pepper
Dash paprika
4 slice bacon
2 tbsp. grated Parmesan cheese
2 tbsp. grated sharp Cheddar cheese

1. Wash the potatoes, pat dry.

2. Prick each potato with a fork in a few pieces.

3. Bake potatoes on a rack at 400 degrees for about 1 hour or until potatoes are done.

4. Cut a thin slice from top of each potato. Scoop out the pulp into a bowl.

5. Mash the potato pulp with the hot milk or half and half until fluffy. Beat in the butter and the green onion. Add seasonings.

6. Fry the bacon until crisp. Crumble. Add to potato mixture.

7. Spoon potato mixture into shells. Sprinkle with both cheeses.

8. Place potatoes on baking sheet. Bake at 375 degrees until potatoes are piping hot and cheese is melted, about 16 minutes.

9. Serve immediately. Good served with: Baked ham or roast chicken or as an entree with a green salad.
