PINEAPPLE UPSIDE DOWN CAKE | |
1/4 c. plus 2 tbsp. butter 1/4 c. oil 1 c. sugar 2 eggs, separated 1/2 c. milk 1 tsp. vanilla 3/4 c. brown sugar 1 (20 oz.) can sliced or crushed pineapple Mix flour, baking powder and salt. Beat oil, butter, sugar in large bowl until light and fluffy. Add egg yolks one at a time, beating well. Combine milk and vanilla, stir dry ingredients into yolk mixture, alternating with milk. Beat egg whites until fluffy and fold into batter. Melt 2 tablespoons butter in 10-inch cast iron skillet. Sprinkle with brown sugar and add drained pineapples. Pour batter on top and bake 40 to 45 minutes. |
