BLACK BEANS AND RICE 
1 lb. dried black beans
1 3/4 tsp. salt
3 green peppers
4 onions
3 cloves garlic
1 c. olive oil
1 can tomato soup
2 lbs. ground beef

Wash beans thoroughly. Cover with water and 1/4 teaspoon salt, to soak overnight. Next morning, bring to boil, cook slowly till tender (approximately 1 hour). Chop peppers, onions, and garlic. Place in frying pan with olive oil, cover and saute. Add 1/2 pepper and onion to beans, continue to cook. To other half add tomato soup, meat and remaining salt. Cover and cook until meat is done (approximately 20 minutes). Add to first mixture and cook 15 to 30 minutes. Serve over well cooked rice.
