MARGE'S SQUASH 
3 lb. zucchini, diced & cooked
1 lg. grated carrot
1 med. chopped onion
1 can cream of chicken soup
8 oz. sour cream
1 stick butter
8 oz. pkg. Pepperidge Farm herb seasoned stuffing

Mix carrot, onion, soup and sour cream. Add drained zucchini. Melt butter in large skillet. Add stuffing; mix well. Put about 1/2 stuffing in zucchini mixture. Put in 9 x 13 inch pan. Cover with rest of stuffing. Bake at 375 degrees for about 45 minutes.
