ZUCCHINI PROVENCAL 
2 tbsp. butter
1/2 c. chopped onion
1 clove garlic, minced
4 zucchini, sliced
2 tomatoes, peeled
1 tsp. salt
1/8 tsp. pepper
1/4 tsp. dried leaf oregano
1/4 tsp. parsley
1/4 tsp. basil

Melt butter in skillet; add onion and garlic. Cook 5 minutes. Add remaining ingredients; mix well. Cook over low heat for 10-15 minutes or until zucchini is crisp tender.
