HAM AND POTATO CASSEROLE | |
1 lb. ham, sliced 1/2 inch thick 1 tbsp. bacon or ham drippings 2 tbsp. butter 2 tbsp. flour 1 1/2 c. milk Salt, if required 1/4 tsp. pepper 6 to 8 med. potatoes Fry ham in fat until well browned on both sides. Place in the bottom of well-greased casserole or baking pan. Melt butter in same skillet used to fry ham and blend in flour. Add milk gradually, and stir over direct heat until sauce boils and thickens. Add salt, if tenderized ham is used, and pepper. Add sliced (1/4 inch thick) potatoes, reheat to boiling and pour over ham. Bake uncovered in a slow 325 degree oven about 1 hour. Either raw or cooked ham may be used for this dish. 5 servings. NOTE: Grated sharp cheese may be sprinkled over top for last 10 minutes of baking to give an attractive surface and add an interesting flavor. |
