AUNT REBA'S BRAN MUFFINS 
2 c. Raisin Bran cereal
1 c. buttermilk
1 1/4 c. flour
2 tsp. baking powder
3/4 tsp. cinnamon
1/4 tsp. baking soda
1/8 tsp. salt
3/4 c. sugar
1/4 c. oil
1 egg

Preheat oven to 400 degrees. Line muffin tins with paper cups.

Mix the cereal and buttermilk and let stand 5 minutes. Combine flour, baking powder, cinnamon, baking soda, and salt and set aside.

In large bowl, mix sugar and oil with wire whisk. Add the egg and beat until well blended. Alternately stir the cereal mixture and the dry ingredients into the sugar-oil mixture just until moistened. Fill paper cups 3/4 full. Bake 20 minutes.
