BLACK BEANS AND RICE 
1 lb. black beans, wash & drain
6 c. water
1 c. onion
1 green pepper
1 clove garlic
1/2 c. olive oil
2 bay leaves
2 tsp. salt
1/4 tsp. pepper
1 ham bone (optional)
1 slice bacon (optional)
1/4 c. wine vinegar
Cooked rice
Hard boiled egg

Boil beans 2 minutes. Cover and let stand one hour. Saute onion and green pepper and garlic in olive oil for 5 minutes. Add to beans with bay leaf, salt, pepper and bacon. Boil and simmer 2 hours, add water if needed. Add vinegar, serve with egg and onion. This last part originally must have been separate, however, I mix mine all together and serve with rice.
