YEAST WAFFLES | |
1 pkg. yeast 1/2 c. lukewarm water 2 c. lukewarm milk 1/2 c. vegetable oil 1 tsp. sugar 1 tsp. salt 2 c. flour 2 eggs Pinch of soda Combine yeast and lukewarm water in 2 quart bowl and let stand 5 minutes. Add lukewarm milk, oil, sugar, salt, then beat in the flour. Cover bowl loosely and let stand at room temperature 8 hours or overnight. When ready to serve, add eggs and soda and beat well with egg beater. Batter will be VERY THIN; resist urge to add more flour! Cook on pre-heated waffle iron. Serves 6. Batter may be kept covered in refrigerator for a few days. The recipe makes great waffles; crisper and with fewer calories. |
