KIM'S SEAFOOD SALAD | |
1 lb. elbow macaroni (Mueller's) 4 hard-boiled eggs, diced 1/2 lb. cooked shrimp 6 oz. fresh picked cooked crabmeat 1/2 c. celery, diced 1/2 c. green sweet pepper, diced 1/2 c. red sweet pepper, diced 2 med. apples, diced (preferably red) Dash of black pepper 2 tbsp. vinegar 1 tbsp. sugar Dash of paprika Hellmann's mayonnaise Cook macaroni according to box instructions and drain. Rinse quickly in cold water and drain. Add all ingredients to macaroni except last four. Mix sugar and vinegar (let sugar melt). Add to mixture. Crush egg yolks and mix with some mayonnaise. Then use enough mayonnaise to cover all ingredients. Serve on a bed of leaf lettuce. Sprinkle with a little paprika. |
