APPLE-NUT SQUARES 
3/4 c. all purpose flour
1 tsp. double acting baking powder
1 egg
2 tbsp. plus 2 tsp. firmly packed dark brown sugar
1/2 c. chunky style peanut butter
1 tsp. vanilla extract
1/2 tsp. ground cinnamon
1/4 c. skim milk
2 sm. Golden Delicious apples, cored, pared and diced

Preheat oven to 350 degrees. Onto sheet of wax paper or a paper plate sift together flour and baking powder; set aside.

In medium mixing bowl combine egg and sugar and, using an electric mixer, beat until thick; add peanut butter, vanilla, and cinnamon and beat until combined. Add sifted flour alternately with milk, about 1/3 at a time, beating after each addition; stir in apple.

Spray an 8 x 8 x 2 inch baking pan with non-stick cooking spray; spread batter evenly in pan and bake until top is lightly browned, 30-35 minutes. Remove pan to wire rack and let cool for 5 minutes; remove cake from pan and return to rack to cool completely. Cut into sixteen 2 inch squares.
