BLACK EYED PEAS AND RICE 
4 sliced chopped bacon
1 chopped onion
16 oz. black eyed peas
1 c. Minute Rice
1 tsp. salt
1/4 tsp. pepper

Microwave bacon on high for 2 1/3 to 3 minutes. Add onion and continue cooking 2 to 4 minutes on high. Add remaining ingredients and cook in 2 quart casserole, covered, for 8 to 10 minutes. Let stand 5 to 10 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
