PICKLED JALAPENOS 
The jalapeno is a hot green pepper native of warm climates. It makes a delicious relish pickled in olive oil and vinegar.

Wash jalapeno peppers. Pack tightly in jar. For every cup of vinegar, use

1/4 cup water
1/4 cup cider vinegar
1/4 cup olive oil
1 teaspoon salt
1 teaspoon pickling spices

Heat mixture to boiling. Pour over peppers so that they are well covered.

Seal jars. Process 1/2 pints and pints for 10 minutes in boiling hot water bath.

I make the same for pickling - just add vegetables fried for 1 minute in the oil before pouring it to the jar. I peel the vegetables and cut them in big pieces: cauliflower, onion quartered, zucchini, carrots, garlic in bulb, jicama and what ever you have that is hard in texture. Sometimes I also like to pour direct to the jar some Tequila or Vodka and let sit for 3 days (if you add alcohol you don`t need to boil the jars). About the spices could also add some oregano and thyme and more sea salt. Yummy !!

Pickling spice mixes vary, but some ingredients often found in them are bay leaves, peppercorns, mustard seed, allspice, celery seeds, turmeric and sometimes dry mustard powder, often dill seeds and cinnamon sticks.

In this recipe, I would use the bay leaves, peppercorns, mustard seed, and celery seeds, (I would also add a few cloves of garlic) but you're free to add your favorites.
