PEACH AMARETTO PIE 
1 c. sugar
2 tbsp. flour
1/4 tsp. salt
8 peaches, peeled and sliced
3 tbsp. Amaretto liquor
1 recipe plain pastry

Sift dry ingredients together and mix with Amaretto liquor. Line pie pan with pastry, fill with peach mixture and cover with top crust. Bake in very hot oven (450 degrees F) 15 minutes; reduce temperature to moderate (350 degrees) and bake 35 minutes longer. Makes 1 (9 inch) pie.
